Coffee Description

This lot is produced in the town of Los Pinos by smallholder farmers, located in the region of Santa Rosa. The rich terroir of Los Pinos is evident in its complex cup profile, with a dark chocolate undertone throughout and notes of stone fruits (plum, blackberries) and citrus fruits (orange, grapefruit, sweet mandarin), with a sweet, nutty aroma.

The coffee is grown in soil composed of richly coloured clay mixed with rough sand and ancient volcanic soil, accompanied by a constant light breeze and a misty rainfall throughout the day, creating the perfect growing conditions. The ripe coffee cherries are hand picked and undergo a fully washed process, followed by drying on patios.
