Like most things Air deteriorates the quality of the goods. This is similar with coffee, air will reduce the quality and the freshness of the coffee. Ground Coffee is coffee beans ground into hundreds and thousands of tiny particles which the air will deteriorate much quicker than coffee in whole bean form. To maximise taste and flavour of coffee at home, coffee beans should be ground on-demand just prior to use.
The grinding mechanism on this grinder replicates that of a commercial electic grinder used in Cafes etc and grinds the beans evenly.
This differs from some other home electric grinders that cut or slice the beans resulting in uneven grinds and thus loss of flavour during the brewing process.
If you are looking to purchase a grinder for home from any supplier make sure there is a burr mechanism (otherwise you might as well save your money use your blender!!!)
On a Burr grinder the bottom blade mechanism rotates while the top blade mechanism does not move thus producing an even Grind.
